How do we source our coffee? It starts with a blind cupping of green coffee samples. We believe in blind cupping, which means we evaluate a selection of green coffees without knowing their origin, cost, or growing conditions. This ensures we focus purely on the quality in the cup. Our importers source ethically and pay above the minimum Fairtrade price, always exceeding market rates. Once we select the coffee we like, we profile roast it to find the best roasting method. Roasting requires trial and error, but with experience, we understand how to handle different beans. Times and temperatures are crucial in developing a roast profile, and our roaster's software replicates this profile for consistency. After roasting, we create a flavor description and develop a label. We maintain the profile by regularly tasting and cupping the coffees. We have a responsibility to the coffee farmer to ensure perfect roasting and brewing every time. From green coffee samples to the final heat-sealed bags, it's a lot of work, but the result is something beautiful.
